"33 Sakes in 33 Days" to help celebrate Ten Thousand Waves' 33rd birthday enters our fifth week with a bang. This week we will be talking about sakes from the Saiya Brewery, one of the world's most award-winning sakes producers. All of Saiya's Yuki No Bosha sakes are genshu which means that they are not diluted with water. Today we are featuring the Yuki No Bosha Junmai Ginjo, a favorite of new and seasoned sake drinkers alike. We really liked this sake with its strong and big flavor and thought it paired well with Chef Kim Muller's fantastic miso barbeque- glazed chicken special. The Yuki No Bosha Junmai Ginjo is medium-bodied with a soft, creamy mouthfeel.
