Do I have the best job or what? I am tasting 33 sakes in 33 days from Ten Thousand Waves' new restaurant, Izanami, and learning so much about sake. To celebrate Ten Thousand Waves' 33rd birthday we are having a Sake Symposium on The Big Show from now until February 19th and we're giving you a chance to win fabulous prizes.

Today's sake is Shichi Hon Yari, The Seven Spearsmen. Duke described this sake as a man's sake, hence the name The Seven Spearsmen. By that he meant that in Japan the men prefered the bigger taste, though I have to say that I really enjoyed it, too. This sake is a junmai, which means that it is "pure" sake, made only from rice, water, koji and yeast. The rice polishing ratio must be at least 70% for this designation. Compared to yesterday's Ban Ryu, this sake has more of a bite and a bit more earthy. This sake pairs well with fried food, grilled meats, nutty cheese or even traditional French cuisine. Susan and I thought that it paired really well with Chef Kim Muller's fried chicken, which was the best fried chicken I have ever eaten and that's saying a lot for a girl from Alabama! 

Shichi Hon Yari is brewed at the Tomita Brewery and is one of Japan's oldest breweries, founded in the 1540's and its current president is the 15th generation in his family to run the business. Tomita is also one of the smallest sake producers, making little over 6,000 cases a year. This is an exceedingly complex junmai with aromas of mushroom, melon and earth. This slightly off-dry sake has a long, clean finish.
