Ten Thousand Waves is turning 33 this year and we are helping to celebrate on The Big Show by tasting 33 Sakes in 33 Days at their new restaurant, Izanami. Nice gig, right? Today's sake is Yoi-no-Tsuki "Midnight Moon" Daiginjo, which is brewed in the purest of the "Nanbu" sake-making tradition which began in the 1100's. Sake students, do you recall our sake pyramid? This sake is a daiginjo, which means that it is top class pure premium- top of the line, if you will. Daiginjo is the highest grade of sake, with a rice polishing ratio of 50% or less and a small amount of brewer's alcohol is added just before pressing to bring out more of the fruity aroma often associated with the sake lees. The "Midnight Moon" has a rice polishing ratio of exactly 50%. This is one smooth sake, to be sure! The "Midnight Moon" is so smooth it's as if it possesses a port-like quality and a soft roundness. Drinking this sake tasted velvety, if that makes sense. We thought this sake paired very well with all of Chef Kim Muller's salads as well as the chicken and beef.
