Born in France, Chef/Owner of Bouche Bistro, Charles Dale has a long history with French Bistro food, whether as sous-chef for Daniel Boulud at Le Cirque or at his own restaurant Renaissance in Aspen. Join Chef Dale for his take on his French Bistro classics with tastes paired with wines from Vincent Girardin.

Randle Johnson, Chief Consulting Winemaker of Colomé Estate, the oldest winery in Argentina, will pour four single vineyard Malbecs from the highest elevation vineyards in the world -- La Brava Vineyard (5700 ft.), Colomé Vineyard (7500 ft.), El Arenal Vineyard (8500 ft.), Altura Maxima Vineyard (9500 ft.) -- and Colomé Estate Malbec (a blend of three vineyards) and Colome Reserva Malbec – 150 year old-vine Malbec. Four of these six wines are unavailable in the U.S.

Wine Seminar: The Crus of Barolo (WS8)

The Barolo commune of Piedmont has five primary villages with unique terroirs that transfer to the Nebbiolo grape's unique expressions. Explore these Crus of Barolo with Willem Johnson from Empson USA (Einaudi and Conterno Fantino), Damian Kanser of Vias and Luciano Brussolo (Damilano) and Barb Wedig of Winebow (Ceretto Bricco Roche). Barolos from all five villages of La Morra, Barolo, Castiglione Falletto, Serralunga D'Alba and Montforte D'Alba will be explored.
