I've been bragging about my super-duper organic garden for a long time. Everyone falls asleep now when the subject comes up. Of course I light up with glee. Ok, all you doubters out there, take this….

This is a beet that I just took out of my garden, and I have NEVER seen anything like it anywhere. It was at least softball size, and that's a low ball estimate! I had to share this with someone, so now I've shared it with you.

Then, I ate it. And it was as sweet and sumptuous as it looked here. And by the way, there has been no PhotoShop magic added to this monster. So, let's rewrite the song…

You better watch out for the Red Beet That Ate Eldorado……if he's still hungry, the whole nation's doomed!!

Always loved that song as a kiddo.
