I just wanted to tell you about yet another great cooking class I had over at Las Cosas with my good pal Johnny Vee. I LOVE cooking with him because he's fun and I always learn something new.
For this class, called "Sauces and Salsas of the Great Southwest", we made, from scratch (of course!) corn tortillas, Tomato Salso Rioja, Tomatillo Salsa, Pico de Gallo, Guacamole, Green Chile Chicken Stew with Cheddar Biscuits, Grilled Eggplant Adovado and Dulce de Leche Ice Cream.
As usual, everything was bright in flavor and soul-satisfying. I worked on the preparation of several of these dishes. In the photograph, I'm squeezing fresh lime juice for the guacamole.

I bought an excellent chile grill to use on the stove top or charcoal grill. My garden is producing bushels of fresh chiles which I will roast, and then deep freeze….after eating my fill of course. Then, in the middle of a January snow storm, I'll have "fresh" from the garden, roasted chiles on the menu.
