Honey's Sake Symposium from Ten Thousand Waves

Hi sake students, today we will be talking about sake #29, Evoluzione Nigori or "Crazy Milk", as we celebrate Ten Thousand Waves' 33rd birthday. A few weeks ago we featured several different sakes from Evoluzione so today we are re-visiting their unique line of sakes. Nigori translates as "cloudy". Almost all sake is filtered, however nigori sake is only partially filtered leaving behind visible rice particles, hence the term "cloudy". The Evoluzione Nigori is a Junmai with a polish rate of 70%. We thought this sake paired well with Chef Kim Muller's crispy brussel sprouts and enjoyed the creamy taste of this nigori. The Evoluzione Nigori had good sake flavor and not too much sweetness or coconut, making it a very versatile sake for pairing with just about anything.
All day today they are featuring the Evoluzione Nigori at Izanami, so you can drive up to Ten Thousand Waves and sample this delicious sake yourself. And of course, Chef Kim Muller's out-of-this-world menu will taste so spectacular with this sake, too.
