Honey's Sake Symposium from Ten Thousand Waves

Today we're tasting two different plum sakes as we celebrate Ten Thousand Waves' 33rd birthday and our 33 Sakes in 33 Days sake symposium. I have been so excited about trying plum sake and these two sakes did not disappoint. First we tasted the Hakuryu Plum sake Junmai and found it to have hints of Granny Smith apple. The Hakuryu is a Junmai sake made with rice polished to 70%. The plum used in this sake is "Koshino Ume" premium plum grown in Niigata. The Hakuryu had a mellow sweet flavor and was well-balanced with mild acidity. We thought this sake was very refreshing and paired well with Chef Kim Muller's delicious beet salad. Our second plum sake that we tasted was the Ume No Yado and we were blown away by this one. This plum sake was so smooth and easy to drink and paired well with the pork. We thought the Ume No Yado balanced the plum flavor with subtle sweetness and crisp acidity. In the battle of the plum sakes, we declared the Ume No Yado the winner.
