Today we are talking about sake #27, Ume No Yado Yuzu Shu Junmai Yuzu Sake, as we celebrate Ten Thousand Waves' 33rd birthday by tasting 33 sakes in 33 days.  We just loved tasting the Yuzu Shu and thought it tasted like lemonade.  I can see how this sake could spell trouble for me!  This sake is refreshingly light with bright citrus flavors combined with a soft texture and a hint of sweetness.  The Yuzu Shu doesn't have much alcohol, only 8%, which is probably a good thing seeing as how I could drink it like water.  We thought that this sake paired really well with Chef Kim Muller's flourless yuzu ricotta cheesecake and also the black sesame panna cotta.
