Honey's Sake Symposium from Ten Thousand Waves

We are having a blast learning about sake and of course, tasting sake to help celebrate Ten Thousand Waves' 33rd birthday. Today we are talking about the Yuri Masamune, which is a honjozo. Produced in Akita by the Saiya Brewery, makers of Yuki No Bosha, this is a favorite among locals of the region. Yuri is the name of the local area of Honjo-shi and Masamune is an old term for Japanese sake. This sake is mellow and rustic and has a firm structure, which makes it enjoyable at a range of temperatures, from chilled to warm, but I think I would only want any sake I drink to be chilled and not warm. The Yuri Masamune is a honjozo, which means that a very small amount of pure distilled alcohol is added to the brew during the final stage of fermentation. As a result, this yields a lighter, more fragrant sake. We thought is was very nice and easy to drink. Linda said that it is like a sake table wine. Not only does it have a pretty bottle but it is also very affordable.
