Honey's Sake Symposium from Ten Thousand Waves

Today we are featuring sake #22, Yuki No Bosha Nigori Junmai Ginjo, as we celebrate Ten Thousand Waves' 33rd birthday with 33 Sakes in 33 Days. All week we are featuring the Yuki No Bosha line of sakes from the Saiya Brewery, one of the world's most award-winning sake producers. The Yuki No Bosha Nigori Junmai Ginjo is not like most nigori, or cloudy sake, which is made from less expensive and lower quality sake. This nigori is a junmai ginjo with its base "brew" being a favorite among many sake drinkers. Referring back to our sake pyramid, junmai ginjo is in the middle and has no alcohol added because it is already so smooth to taste. I never thought I would like a nigori but the Yuki No Bosha Nigori Junmai Ginjo is a thin nigori, not too cloudy, and we thought it tasted softer than the ginjo. This sake is drier than most nigori and has hints of peach and melon. Even though it's creamy and smooth, it finishes crisp and refreshing. Linda, Susie and I all agreed that it paired really well with Chef Kim Muller's fantastic kinpira gobo, which is burdock root, carrot and soy sesame dressing- divine!
