Honey's Sake Symposium from Ten Thousand Waves

Hello Sake students! Our Sake Symposium continues with 33 Sakes in 33 Days to help celebrate Ten Thousand Waves' 33rd birthday and their new restaurant, Izanami. Today we are featuring another Yamahai sake, Minato Harbor Yamahai Nama Genshu. This sake won the Los Angeles International Wine and Spirits 2012 Gold Medal Brewery Award. Nama means unpasteurized sake, which contains living microorganisms and care must be taken for its storage (ie, constant refrigeration). Genshu means undiluted sake. Most sake is diluted after pressing, however, genshu is not. Generally, the alcohol percentage of genshu is 18-20%, and the Minato Harbor Yamahai Nama Genshu registers at 20 to 21% - impressive! Because this sake is undiluted, unpasteurized and Yamahai it is a bold, full bodied sake with yeasty aromas of bread and notes of mushrooms. Its robust flavors and powerful acidity allows it to pair with heartier foods, such as steak and Chef Kim Muller's delicious lightly fried chicken. This particular sake comes in an attractive tin can. Linda said that she doesn't ordinarily drink sake in a can, but this sake is so fabulous that she can easily make an exception. We loved the Minato Harbor Yamahai Nama Genshu and thought it paired perfectly with the chicken at Izanami.
