We're having so much fun celebrating Ten Thousand Waves' 33rd birthday by tasting 33 Sakes in 33 Days at their new restaurant, Izanami. Our 13th sake is the Minato Harbor Yamahai Futsuu. This tangy, hearty sake has great acidity resulting from the traditional Yamahai brewing method I've been talking about this week. The finish is slightly sweet. This sake is extremely versatile and pairs well with a range of flavors and foods. When referring to its versatility, Linda said that it was in a sense like a red table wine. We thought the Minato Harbor Yamahai Futsuu was delicious and very smooth. The Yamahai style sakes are higher in acidity, with gamey, deep flavors. This is what makes them so food friendly, especially when trying to find a match for heavier foods.
