Honey's Sake Symposium from Ten Thousand Waves

We are celebrating Ten Thousand Waves' 33rd birthday by tasting 33 Sakes in 33 Days at their new restaurant, Izanami. Our 12th sake we tasted is Jikomi "Old Mountain" Tokubetsu Junmai Yamahai. Earlier, I was talking about the yamahai production of sake and that there aren't many sakes made with this process, but the "Old Mountain" is a sake made by this process. Linda described this sake as "sake funk", meaning that it is very rich, acidic and tangy. This sake was aged for about 4 weeks whereas a lot of sake is aged for about 2 weeks. We really enjoyed tasting this sake and thought it paired well with Chef Kim Muller's Tonkatsu, which is lightly fried pork. The "Old Mountain" sake actually pairs well with all food. Linda said that this sake has an aged feeling to it, like sherry.
